Oatmeal Pancakes

A great recipe for breakfast or dinner! We will be making this tomorrow morning if we yet another snow day (4th of the year...). I can't take credit - my dear college friend Laila passed it along to me.

2 Cups Oatmeal
1/2 Cup Flour (I use whole wheat)
1/4 Cup sugar
1 t. baking soda
1 t. baking powder
2 Cups buttermilk
1/4 C butter melted
2 eggs
1 t. vanilla
(Optional things I add - some cinnamon and flax seed)

Mix dry ingredients together. In a separate bowl, mix wet ingredients together. Add wet to dry. Mix gently til blended, don't overmix

Let stand 15 minutes.
Batter will be thick, don't add liquid. Make pancakes small - they are thick.

Great to take "on the go". Batter can be made ahead of time and kept in the fridge.
